Breakfast - Crunch Cereal
1/4 cup unsalted dry-roasted peanuts
1/3 cup raisins
1 1/2 cup crispix cereal
1 1/2 cup cheerios
1 cup unsalted pretzel twists
Mix together all ingredients in a large bowl. Alternatively, put in a jar as a snack mix.
Lunch - Potato Patties
1 tbsp minced fresh parsley
2 tbsp whole-wheat flour
2 tbsp green bell pepper, finely chopped
2 tbsp celery, finely chopped
2 tbsp onion, finely chopped
3 large potatoes, peeled or unpeeled
Shred the potatoes either using a grater or a food processor. Mix with the other ingredients and mould into four patties. Cook in a nonstick tray until browned all over - approximately 10 minutes.
Dinner - Stir Fry: Sweet Pepper & Chicken
1 tsp cornstarch
1/4 cup chicken broth
8 oz can bamboo shoots, drained
1 tsp grated ginger root
1 tbsp cooking oil
1 1/2 cup sliced fresh mushrooms
2 med green/sweet red peppers
1 med onion, cut into wedges
1 tbsp dry sherry
3 tbsp soy sauce
18 oz boned chicken breast halves
Chop the skinless chicken into half inch chunks. Put in a bowl; mix in the soy sauce and sherry. Leave to stand for 30 minutes. Spray a large skillet or cold wok with cooking oil; preheat the oven to a medium-high heat. Add the onion, and stir-fry for 2 minutes. Add in the peppers, and stir-fry for another minute. Add the mushrooms, and stir-fry further 1 minute more or until the vegetables are tender-crisp. Remove the vegetables from the wok and put to one side.
Drain the chicken, and reserve the marinade. Add oil to the wok. Add ginger root, and stir-fry for about 15 seconds. Add half the chicken,and stir fry for about 3-4 minutes until there is no pinkness left. Remove. Stir-fry the 2nd half of the chicken for about 3-4 minutes until there is no pinkness left. Put all chicken, vegetables, and bamboo shoots into the wok and push them from the center of the wok.
Mix the broth, cornstarch, and quarter of pepper into the marinade that you reserved earlier, and then add to the wok. Cook and stir until it has thickened slightly, then gently toss it to cover the chicken mixture.
